Vishhvaan's Famous Potatoes

Ingredients

  • 4 medium sized potatoes
  • 2 onion
  • 1 cup urad dal
  • 1 teaspoon mustard seeds [optional]
  • 2 teaspoons of chilli powder
  • 2 teaspoons of paprika
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 3 tablespoons of olive oil or butter
  • 3 teaspoons salt
  • 3 sprigs of coriander

Servings: 4

Process

  1. Heat 3 cups of water with salt until boiling
  2. While waiting for the water to boil, cut potatoes into approximately 3cm cubes
  3. Put the potatoes into the boiling water to parboil
  4. While waiting for the potatoes to boil, french onions with a width of 1cm
  5. Periodically check the potatoes for a soft exterior with a hard interior
  6. Once ready, drain the potatoes and place in a mixing bowl with a cover
  7. Add one tablespoon of olive oil to the potatoes, add the onion powder, and the garlic powder
  8. Shake the potatoes in the mixing bowl so that the potatoes are covered with seasoning, you’ll notice the boiled potatoes are flakey
  9. Bake in the oven at 400°F for 40 minutes or until golden and crispy
  10. Near the end of baking, add the remaining oil or butter to a pot on medium heat
  11. Add the urad dal to the oil, stir until the dal becomes golden
  12. Add the mustard seeds if available
  13. Add chili powder and paprika to the oil and stir for a few seconds
  14. Add the onion to the oil, stir for about a minute to keep the onions crunchy
  15. Add the roasted potatoes and mix with the onions and dal
  16. Dish out and top with coriander
